- ¼ cup (60 ml) unsweetened almond milk or milk of choice
- 1 tablespoon almond butter
- 1 teaspoon vanilla extract
- ¼ teaspoon sea salt
- 1 tablespoon maple syrup, optional
- 1–2 tablespoons warm water, as needed
For Garnishing
- A small pinch of flaky sea salt
- Chopped pecans or walnuts
- A few thin slices of date
- Optional: unsweetened coconut flakes
Instructions
1. Prepare the Date-Oat Crust
Place the rolled oats in a food processor and pulse several times until they become a coarse flour.
Add the pitted dates, almond butter, vanilla extract, and a small pinch of salt.
Process until the mixture becomes sticky and holds together when pressed between your fingers.
If the mixture seems too dry, add water 1 teaspoon at a time and pulse again. You want a soft, slightly sticky mixture rather than a wet paste.
2. Make the Crust Layer
Divide the crust mixture evenly among eight small dessert glasses or shooter glasses.
Use the back of a small spoon to gently press the mixture into the bottom of each glass.
Don’t pack it too tightly or the crust can become difficult to spoon out once chilled.
Place the glasses in the refrigerator while you prepare the filling.
3. Make the Cheesecake Filling
Add the softened cream cheese, Greek yogurt, maple syrup, vanilla extract, and lemon juice to a mixing bowl.
Beat with an electric mixer until smooth and creamy.
If the mixture is too thick, add 1 tablespoon of milk and mix again. Add another tablespoon only if necessary.
Taste the filling and adjust the sweetness according to your preference.
For a more pronounced cheesecake flavor, add an additional teaspoon of lemon juice.
4. Fill the Shooter Glasses
Remove the chilled glasses from the refrigerator.
Spoon or pipe the cheesecake mixture over the crust layer, dividing it evenly between all eight glasses.
For a cleaner presentation, transfer the filling to a piping bag or a zip-top bag with the corner snipped off. Pipe the filling into each glass rather than spooning it in.
Leave a little room at the top for the caramel layer.
5. Prepare the Salted Caramel
Add the pitted dates, almond milk, almond butter, vanilla extract, sea salt, and optional maple syrup to a high-speed blender or food processor.
Blend until completely smooth and creamy.
Stop and scrape down the sides as necessary.
If the caramel is too thick to blend, add warm water 1 tablespoon at a time until it reaches a thick but pourable consistency.
The finished caramel should be smooth enough to spoon over the cheesecake but thick enough to remain as a distinct layer.
6. Add the Caramel
Spoon approximately 1–2 teaspoons of salted caramel over each cheesecake shooter.
Gently spread it toward the edges using the back of a small spoon.
Don’t worry if the caramel layer isn’t perfectly smooth—the rustic appearance looks beautiful once garnished.
7. Chill
Place the cheesecake shooters in the refrigerator for at least 2 hours.
Chilling allows the filling to become firmer and gives the flavors time to blend.
For the best texture, you can prepare them several hours ahead of serving.
8. Garnish and Serve
Just before serving, sprinkle each shooter with a tiny pinch of flaky sea salt.
Top with a few chopped pecans or walnuts and, if desired, a small piece of date or a few unsweetened coconut flakes.
Serve chilled.
Tips for the Best Cheesecake Shooters
Use Soft Dates
Soft Medjool dates work particularly well because they blend into a smooth caramel-like paste. If your dates are dry or firm, soak them in hot water for about 10 minutes, then drain thoroughly before blending.
Don’t Over-Salt the Caramel
The cheesecake and caramel both contain a little salt, so start conservatively. You can always add more flaky salt on top after chilling.
Make Them Sweeter or Less Sweet
The dates and maple syrup provide natural sweetness, but you can adjust the recipe to your taste.
For a less-sweet dessert, omit the optional maple syrup from the caramel.
For a sweeter cheesecake, add another tablespoon of maple syrup to the filling.
For Extra Protein
Use thick, high-protein Greek yogurt and reduced-fat cream cheese. This gives the dessert a creamy texture while increasing the protein content compared with a traditional cheesecake.
For a Nut-Free Version
Replace the almond butter with sunflower-seed butter or another nut-free seed butter.
For the crust, use sunflower-seed butter as well.
Make sure the oats and other ingredients are certified gluten-free if you need the dessert to be strictly gluten-free.
Make-Ahead Instructions
These cheesecake shooters are ideal for preparing ahead of time.
Assemble the crust, cheesecake filling, and caramel layers, cover the glasses, and refrigerate for up to 2 days.
Wait until shortly before serving to add nuts, flaky salt, or other toppings so they remain crisp and attractive.
Storage
Store the finished cheesecake shooters covered in the refrigerator.
For the best texture and flavor, enjoy them within 2–3 days.
Because the dessert contains dairy and Greek yogurt, don’t leave it at room temperature for extended periods.
Optional Chocolate-Caramel Version
For a chocolate variation, add 1 tablespoon unsweetened cocoa powder to the cheesecake filling.
You can also sprinkle a little finely grated dark chocolate over the caramel before serving.
The combination of chocolate, caramel, creamy cheesecake, and sea salt makes an especially indulgent-tasting version.
Nutrition-Friendly Serving Idea
Because these are individual shooters, they’re naturally portion-controlled. Serve one small glass per person alongside fresh berries, sliced fruit, or a cup of coffee or tea.
The result is a creamy, tangy cheesecake dessert with a chewy oat-date base and rich salted-caramel flavor—all without baking and without the need for a traditional cheesecake crust.
