Homemade Bounty Bars

Ingredients

For the coconut filling

  • 2½ cups (200–220 g) unsweetened shredded coconut
  • 1 cup (240 g) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons coconut oil, melted
  • ¼ teaspoon salt

For the chocolate coating

  • 2 cups (340 g) milk or dark chocolate, chopped
  • 1 tablespoon coconut oil or vegetable shortening

Equipment

You’ll need a mixing bowl, spatula, small baking pan or loaf pan, parchment paper, knife, microwave-safe bowl or double boiler, fork, and a baking tray lined with parchment paper.

Step 1: Prepare the Pan

Line an approximately 8 × 8-inch (20 × 20 cm) baking pan with parchment paper.

Leave some parchment paper hanging over the sides. This will make it much easier to lift the chilled coconut mixture from the pan later.

Lightly grease the parchment with a tiny amount of coconut oil if desired.

Step 2: Make the Coconut Filling

Place the shredded coconut in a large mixing bowl.

Add the sweetened condensed milk, vanilla extract, melted coconut oil, and salt.

Stir everything together until the coconut is evenly coated and the mixture becomes thick and sticky.

The mixture should hold together when pressed. If it seems extremely wet, add a little more shredded coconut. If it seems too dry or crumbly, add a small amount of condensed milk.

Don’t add too much liquid at once because you want a firm filling that can be sliced into bars.

Step 3: Press Into the Pan

Transfer the coconut mixture to the prepared pan.

Use the back of a spatula, the bottom of a glass, or your clean hands to press it down firmly and evenly.

Try to create a smooth, level surface. Compressing the mixture well is important because it prevents the bars from falling apart when you cut and coat them.

Aim for a thickness of approximately ½–¾ inch.

Step 4: Chill

Cover the pan and place it in the refrigerator for at least 2 hours, or until the coconut layer is firm.

For an even firmer filling, you can place it in the freezer for approximately 30–45 minutes.

Don’t skip this step. The colder and firmer the coconut mixture is, the easier it will be to cut and dip into chocolate.

Step 5: Cut the Bars

Lift the chilled coconut slab from the pan using the parchment paper.

Place it on a cutting board and use a sharp knife to cut it into rectangular bars.

You can make approximately 12–16 bars, depending on the size you prefer.

If the coconut mixture starts becoming soft while you’re cutting it, return it to the refrigerator for another 15–20 minutes.

Step 6: Melt the Chocolate

Place the chopped chocolate and coconut oil in a microwave-safe bowl.

Microwave in 20–30-second intervals, stirring well after each interval, until the chocolate is almost completely melted.

Continue stirring until the remaining pieces melt from the residual heat.

Alternatively, melt the chocolate gently over a double boiler. Make sure no water comes into contact with the chocolate, as even a small amount can cause it to seize.

The coconut oil helps make the chocolate smoother and easier to work with.

Step 7: Coat the Coconut Bars

Line a baking tray with parchment paper.

Using a fork, carefully lift one coconut bar and place it into the melted chocolate.

Turn it gently until completely coated.

Lift the bar out of the chocolate and allow the excess chocolate to drip back into the bowl.

Place the coated bar onto the parchment-lined tray.

Repeat with the remaining coconut bars.

If you want a thicker chocolate coating, allow the first layer to set and dip the bars a second time.

Step 8: Add a Decorative Finish

While the chocolate is still soft, you can leave the bars plain or add a simple decorative finish.

Drizzle a little extra melted chocolate over the top using a spoon or piping bag.

You can also sprinkle a small amount of shredded coconut over the chocolate before it sets.

For a classic appearance, keep the coating smooth and let it set naturally.

Step 9: Chill Until Set

Place the finished bars in the refrigerator for approximately 20–30 minutes, or until the chocolate coating is completely firm.

Once set, transfer the bars to an airtight container.

Allow them to sit at room temperature for a few minutes before serving. This gives the chocolate a slightly softer bite while keeping the coconut filling firm and chewy.

Storage

Store homemade Bounty Bars in an airtight container in the refrigerator for up to 1 week.

Place parchment paper between layers if you’re stacking them to prevent the chocolate from sticking.

The bars can also be frozen. Place them in a freezer-safe container with parchment between the layers and freeze for up to 2–3 months.

To serve, transfer them to the refrigerator and allow them to thaw gradually.

Tips for the Best Bounty Bars

Use unsweetened shredded coconut if you’re using sweetened condensed milk. The condensed milk already provides plenty of sweetness, and sweetened coconut can make the filling excessively sugary.

For a more intense coconut flavor, replace the vanilla extract with a little coconut extract or add an extra tablespoon of coconut oil.

Milk chocolate gives the bars a sweeter, creamier flavor, while dark chocolate creates a richer contrast with the sweet coconut filling.

If you’re having trouble dipping the bars, chill them again before coating. Cold coconut centers are much easier to handle.

You can also freeze the individual coconut pieces for 15–20 minutes before dipping them into chocolate. This helps them maintain their shape and makes the coating process easier.

Variations

For dark chocolate Bounty Bars, use 60–70% dark chocolate for the coating.

For almond-coconut bars, press a whole roasted almond into each coconut piece before dipping it in chocolate.

For mini Bounty Bars, cut the coconut slab into smaller pieces and coat them individually. These are perfect for parties and dessert platters.

For a more indulgent version, drizzle the finished bars with white chocolate after the dark or milk chocolate coating has set.

Final Result

These homemade Bounty Bars have a soft, chewy coconut center surrounded by a rich chocolate shell. They’re simple enough to make without special baking skills but impressive enough to serve as a homemade dessert.

The combination of creamy condensed milk, fragrant coconut, and smooth chocolate makes them especially difficult to resist. Keep a batch chilled in the refrigerator for an easy sweet treat whenever a chocolate craving strikes.
