High-Protein Chicken Salad

For the Chicken

  • 500 g boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1 tablespoon lemon juice

For the Salad

  • 4 cups chopped lettuce or mixed salad greens
  • 1 medium cucumber, diced
  • 2 medium tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 bell pepper, diced
  • 1/2 cup sweet corn, optional
  • 1/4 cup fresh parsley or coriander, chopped
  • 1/4 cup roasted chickpeas, optional
  • 2 tablespoons pumpkin seeds or sunflower seeds

For the High-Protein Dressing

  • 3/4 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon olive oil
  • 1 small garlic clove, finely minced
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 teaspoon dried oregano
  • 1–2 tablespoons water, as needed

Instructions

1. Prepare the Chicken

Start by preparing the chicken breasts. Pat them dry with paper towels, then place them on a cutting board. If the breasts are very thick, gently pound them to an even thickness. This helps the chicken cook evenly and prevents the outside from becoming dry before the center is fully cooked.

In a small bowl, combine the olive oil, paprika, garlic powder, onion powder, black pepper, salt, oregano, and lemon juice. Rub this seasoning mixture evenly over both sides of the chicken.

Heat a skillet or grill pan over medium heat. Add the chicken and cook for approximately 5–7 minutes per side, depending on thickness. The chicken should be golden brown on the outside and fully cooked in the center. For food safety, the thickest part should reach 74°C (165°F).

Remove the chicken from the pan and let it rest for about 5 minutes. Resting allows the juices to redistribute, helping the chicken remain tender. Once rested, slice or chop it into bite-sized pieces.

2. Make the Protein-Rich Dressing

While the chicken is resting, prepare the dressing. Add Greek yogurt, lemon juice, olive oil, minced garlic, black pepper, salt, and oregano to a small bowl.

Whisk until smooth. If the dressing is too thick, add water one tablespoon at a time until it reaches your preferred consistency. Taste and adjust the seasoning. For extra freshness, you can add a little more lemon juice or chopped parsley.

Greek yogurt makes this dressing creamy while adding protein, making it a useful alternative to heavier mayonnaise-based dressings.

3. Prepare the Vegetables

Wash and dry all the vegetables thoroughly. Chop the lettuce into bite-sized pieces and place it in a large salad bowl.

Add the diced cucumber, chopped tomatoes, sliced red onion, bell pepper, and sweet corn if using. Sprinkle in the fresh parsley or coriander.

For additional texture and nutrition, add roasted chickpeas and pumpkin or sunflower seeds. These ingredients provide extra fiber, minerals, and plant-based protein while giving the salad a satisfying crunch.

4. Assemble the Salad

Add the sliced chicken to the bowl of vegetables. Drizzle the Greek yogurt dressing over the top.

Gently toss everything together until the vegetables and chicken are evenly coated. If you are preparing the salad for meal prep, keep the dressing in a separate container and add it immediately before eating. This prevents the lettuce from becoming soggy.

Taste the finished salad and add additional black pepper, lemon juice, or salt if necessary.

Serving Suggestions

Serve the chicken salad immediately for the best texture. It can be enjoyed on its own as a light but filling meal, or paired with a small portion of whole-grain bread, pita, brown rice, or roasted potatoes if you need additional carbohydrates.

For even more protein, add a boiled egg, extra Greek yogurt dressing, cottage cheese, or additional chicken. If you prefer a lower-calorie version, increase the amount of leafy greens and vegetables while reducing the amount of olive oil and seeds.

You can also customize the flavor profile. Add chili flakes for heat, cumin for a warmer flavor, or fresh mint for a refreshing Mediterranean-style variation. Avocado can provide healthy fats and creaminess, while apples or grapes can add a subtle sweet contrast to the savory chicken.

Meal-Prep Instructions

This recipe works particularly well for meal preparation. Cook the chicken in advance and allow it to cool completely before storing it in an airtight container in the refrigerator.

Prepare the vegetables separately when possible, especially the lettuce and tomatoes. Store the dressing in a small sealed container. When you are ready to eat, combine the vegetables and chicken, add the dressing, and toss just before serving.

For best quality, consume refrigerated cooked chicken within 3–4 days and keep it properly chilled. If the salad develops an unusual smell, appearance, or texture, discard it.

Approximate Nutrition

The exact nutrition will depend on the brands and quantities used, but one large serving can provide approximately 40–50 grams of protein, particularly when the recipe is divided into four servings and generous portions of chicken and Greek yogurt are used.

The chicken supplies lean, complete protein, while Greek yogurt contributes additional protein and calcium. Vegetables provide fiber, vitamins, minerals, and volume, helping make the meal satisfying. Seeds and olive oil contribute unsaturated fats and additional nutrients.

Tips for the Best Chicken Salad

The most important trick is not to overcook the chicken. Using chicken breasts of similar thickness helps them cook evenly. Letting the meat rest before cutting also helps retain moisture.

For maximum flavor, marinate the chicken with the seasoning mixture for 20–30 minutes before cooking. You can also prepare the chicken on an outdoor grill, in an air fryer, or in the oven.

For a creamier salad, increase the Greek yogurt dressing. For a lighter and crunchier version, use more lettuce, cucumber, and bell pepper. If you enjoy stronger flavors, add fresh herbs, lemon zest, or a small amount of Dijon mustard to the dressing.

This high-protein chicken salad is ultimately a flexible recipe: keep the seasoned chicken and yogurt-based dressing as the foundation, then change the vegetables, herbs, and toppings according to your preferences. It is nutritious, filling, easy to prepare, and versatile enough to become a regular part of a healthy lunch or dinner routine.
