Cranberry Pistachio Shortbread Cookies

Ingredients

  • 1 cup (225 g) unsalted butter, softened
  • ½ cup (100 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • ¼ teaspoon salt
  • ¾ cup (90 g) dried cranberries, finely chopped
  • ½ cup (60 g) shelled pistachios, roughly chopped

Optional Decoration

  • ½ cup white chocolate, melted
  • Extra chopped pistachios
  • Extra dried cranberries

Instructions

1. Prepare the Dough

Place the softened butter and sugar in a large mixing bowl. Beat them together until smooth and creamy, about 2–3 minutes. You do not need to whip the butter excessively; the goal is simply to create a smooth mixture.

Add the vanilla extract and mix again until evenly incorporated.

2. Add the Dry Ingredients

In a separate bowl, whisk together the flour and salt. Gradually add the dry ingredients to the butter mixture.

Mix gently until a soft dough begins to form. Avoid overmixing because too much mixing can make shortbread cookies less tender.

3. Add Cranberries and Pistachios

Fold in the chopped dried cranberries and pistachios. Distribute them evenly throughout the dough so that every cookie gets a little cranberry and pistachio.

If the dough feels slightly crumbly, gently press it together with your hands. Shortbread dough should be firm but should hold together when pressed.

4. Shape the Dough

Place the dough on a sheet of parchment paper and shape it into a log approximately 2 inches (5 cm) in diameter.

Wrap the log tightly in parchment paper or plastic wrap and gently roll it to create an even shape.

Refrigerate the dough for at least 1 hour. Chilling is important because it helps the butter firm up and prevents the cookies from spreading too much during baking.

5. Slice the Cookies

Preheat your oven to 350°F (175°C).

Remove the chilled dough from the refrigerator and unwrap it. Using a sharp knife, cut the log into slices about ¼ inch (6 mm) thick.

If the edges crack while slicing, simply allow the dough to sit at room temperature for a few minutes before continuing.

6. Bake

Arrange the cookies on a parchment-lined baking sheet, leaving a little space between each one.

Bake for approximately 10–14 minutes, or until the edges are lightly golden.

The centers may still look pale. That is normal for shortbread. Avoid overbaking because the cookies will continue to firm up as they cool.

7. Cool

Leave the cookies on the baking sheet for about 5 minutes. Then carefully transfer them to a wire rack.

Allow them to cool completely before decorating or storing.

Optional White Chocolate Decoration

For an extra festive finish, melt the white chocolate gently until smooth.

Dip one end of each cooled shortbread cookie into the melted chocolate, or drizzle the chocolate over the tops.

Immediately sprinkle with chopped pistachios and tiny pieces of dried cranberry. Let the chocolate set completely before serving.

Helpful Tips

Use softened butter: The butter should be soft enough to mix easily but should not be melted.

Chill the dough: This is one of the most important steps. Cold dough helps the cookies keep their shape.

Chop the cranberries: Smaller pieces distribute more evenly through the dough and make slicing easier.

Do not overmix: Once the flour disappears, stop mixing. This helps keep the shortbread tender.

Watch the baking time: Shortbread should generally remain fairly light in color. Slightly golden edges are a good indication that they are ready.

Storage

Store completely cooled cookies in an airtight container at room temperature for approximately 1 week.

You can also freeze the baked cookies in a freezer-safe container for up to 2–3 months. Place parchment paper between layers to prevent them from sticking together.

The unbaked dough can also be wrapped tightly and frozen. Thaw it in the refrigerator before slicing and baking.

Serving Ideas

These cookies are delicious on their own, but they also make a beautiful addition to a holiday dessert platter. Serve them alongside tea, coffee, hot chocolate, or milk.

For a festive presentation, arrange the cookies on a plate and decorate them with white chocolate, pistachios, and cranberries.
