🥚 4-Ingredient Egg Muffins

Ingredients

  • 6 large eggs
  • ½ cup shredded cheddar cheese
  • ½ cup finely chopped bell pepper
  • ½ cup cooked, chopped chicken or turkey

Instructions

1. Prepare the Oven

Preheat your oven to 180°C (350°F).

Lightly grease a 6-cup muffin tin with cooking oil or butter, or use silicone muffin cups.

2. Beat the Eggs

Crack the eggs into a bowl and whisk until the yolks and whites are completely combined.

3. Add the Fillings

Add the shredded cheese, chopped bell pepper, and cooked chicken or turkey.

Stir gently until everything is evenly distributed.

4. Fill the Muffin Tin

Divide the mixture between the muffin cups, filling each about ¾ full. Leave a little space because the eggs will puff up as they bake.

5. Bake

Place the muffin tin in the preheated oven and bake for approximately 18–22 minutes, or until the egg muffins are puffed and completely set in the center.

Remove from the oven and let them cool for a few minutes before taking them out of the tin.

⭐ Tips

  • Don’t overfill the muffin cups.
  • Chop the fillings fairly small so the muffins hold together well.
  • Make sure any meat added is already fully cooked.
  • For extra flavor, you can add salt and pepper, although that would technically make the recipe more than four ingredients.
  • Let the muffins cool for a few minutes before removing them—they’ll firm up as they cool.

🥦 Easy Variations

You can keep the same four-ingredient formula while changing the flavors:

Spinach version: Replace the bell pepper with finely chopped spinach.

Mushroom version: Use cooked, finely chopped mushrooms instead of pepper.

Broccoli version: Add finely chopped cooked broccoli.

Cheese & tomato: Replace the meat with chopped tomato for a vegetarian option.

🧊 Storage

Keep leftover egg muffins refrigerated in a covered container and use them within 3–4 days. Reheat until hot before serving.

These little muffins are soft, cheesy, protein-rich, and incredibly simple—a great way to make breakfast ahead of time.
