- 1 teaspoon vanilla extract
- 1½ cups (135 g) quick oats
- ½ cup (60 g) roasted peanuts, roughly chopped
- ¼ teaspoon salt
For the Chocolate Topping

- 2 tablespoons peanut butter
- 1 teaspoon coconut oil, optional
Optional Toppings
- Chopped roasted peanuts
- Flaky sea salt
- Mini chocolate chips
- Coconut flakes
- A light drizzle of melted peanut butter
Instructions
1. Prepare the Pan
Line an 8 × 8-inch (20 × 20 cm) square baking pan with parchment paper.
Leave some parchment hanging over two sides. This will make it much easier to lift the chilled bars out of the pan later.
Lightly grease the parchment if desired.
2. Make the Peanut Butter Mixture
Place the peanut butter, honey, and butter or coconut oil in a small saucepan.
Warm over low heat, stirring continuously.
You don’t need to boil the mixture. Simply heat it until the peanut butter becomes smooth and the ingredients are well combined.
Remove the saucepan from the heat.
Stir in the vanilla extract and salt.
3. Add the Oats and Peanuts
Place the quick oats and chopped roasted peanuts in a large mixing bowl.
Pour the warm peanut butter mixture over them.
Stir thoroughly until all of the oats and peanuts are coated.
The mixture should be thick and sticky.
If it seems unusually dry, add another tablespoon of peanut butter or honey.
4. Press Into the Pan
Transfer the mixture to the prepared baking pan.
Use the back of a spoon, spatula, or the bottom of a glass to press it down firmly and evenly.
Pressing firmly is important because it helps the bars hold together once cut.
Place the pan in the refrigerator for about 30 minutes while you prepare the chocolate topping.
5. Melt the Chocolate
Place the chocolate chips and peanut butter in a microwave-safe bowl.
Microwave in 20–30 second intervals, stirring well after each interval.
Continue until the chocolate is almost completely melted.
Stir until completely smooth.
If desired, add 1 teaspoon coconut oil to make the chocolate topping smoother and easier to spread.
You can also melt the chocolate using a double boiler over gently simmering water.
6. Add the Chocolate Layer
Remove the chilled peanut mixture from the refrigerator.
Pour the melted chocolate over the top.
Spread it evenly using a spatula.
For extra peanut flavor, drizzle a few teaspoons of slightly warmed peanut butter over the chocolate and gently swirl it with a toothpick.
Sprinkle chopped peanuts and a tiny pinch of flaky sea salt over the top if desired.
7. Chill Until Firm
Return the pan to the refrigerator.
Chill for 1–2 hours, or until the chocolate is completely firm and the peanut layer has set.
For a faster option, place the pan in the freezer for approximately 30–45 minutes.
Don’t freeze for too long before cutting, as the chocolate can become very hard.
8. Cut Into Bars
Use the parchment paper to lift the entire slab from the pan.
Place it on a cutting board.
Allow it to sit at room temperature for about 5 minutes if it is very cold.
Use a sharp knife to cut it into 12–16 bars or small squares.
For clean cuts, wipe the knife with a warm, damp cloth between cuts.
Tips for the Best Chocolate Peanut Bars
Use Natural or Regular Peanut Butter
Both work well. If using natural peanut butter, stir it thoroughly before measuring because the oil can separate.
Regular creamy peanut butter tends to produce slightly firmer bars.
Don’t Overheat the Peanut Butter
Keep the heat low and remove the mixture as soon as everything is smooth. Excessive heating can change the texture.
Press the Base Firmly
This is one of the most important steps. A loosely packed base can crumble when you cut the bars.
Choose Good Chocolate
Dark chocolate gives the bars a less-sweet, more intense flavor, while semi-sweet chocolate creates a classic dessert taste.
For an especially rich version, use chocolate containing around 60–70% cocoa.
Add a Little Salt
A small amount of salt balances the sweetness of the honey and chocolate and makes the peanut flavor stand out.
Flaky sea salt on top is optional but highly recommended.
Healthier Variation
For a slightly lighter version, use natural peanut butter, old-fashioned or quick oats, dark chocolate, and reduce the honey to ⅓ cup.
You can also replace some of the chocolate chips with finely chopped dark chocolate.
Keep in mind that peanut butter and chocolate are still energy-dense foods, so smaller bars make a convenient portion.
No-Bake Version
This recipe is naturally no-bake.
There’s no need to turn on the oven. The bars set through chilling, which makes them particularly convenient during warm weather or when you want a quick dessert without baking.
Nut-Free Variation
For a peanut-free version, replace the peanut butter with sunflower-seed butter and replace the chopped peanuts with roasted sunflower seeds.
Use a nut-free chocolate if necessary.
Storage
Store the finished bars in an airtight container in the refrigerator for up to 1 week.
For longer storage, freeze the bars individually or place parchment paper between layers in a freezer-safe container.
They can be frozen for approximately 2–3 months.
Allow frozen bars to thaw in the refrigerator or at room temperature for a few minutes before serving.
Serving Ideas
These chocolate peanut bars are delicious straight from the refrigerator, but you can also serve them slightly softened at room temperature.
For a more indulgent dessert, serve a bar with:
- Vanilla ice cream
- Fresh strawberries
- Banana slices
- Greek yogurt
- A drizzle of warm peanut butter
- Extra melted dark chocolate
Final Result
The finished bars should have a firm but chewy peanut-and-oat base, plenty of roasted peanut crunch, and a smooth layer of chocolate on top.
The combination of salty peanuts, creamy peanut butter, honey, oats, and rich chocolate creates a satisfying homemade treat that requires very little preparation.
With no complicated baking steps and only a short chilling period, these Chocolate Peanut Bars are an easy recipe to keep on hand whenever you’re craving something sweet, chocolatey, and peanut-buttery.
