Creamy Tuscan Shrimp

Ingredients

For the Shrimp

  • 500 g (about 1 lb) large shrimp or prawns, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning

For the Creamy Tuscan Sauce

  • 4–5 cloves garlic, finely minced
  • 1 cup heavy cream or whipping cream
  • ½ cup chicken or vegetable broth
  • ½ cup freshly grated Parmesan cheese
  • 1 cup sun-dried tomatoes, thinly sliced
  • 2 cups fresh spinach
  • ½ teaspoon dried oregano
  • ½ teaspoon red pepper flakes, optional
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped, optional
  • 1 teaspoon fresh lemon juice
  • Salt and black pepper to taste

Preparing the Shrimp

Start by preparing the shrimp. If you are using frozen shrimp, thaw them completely and drain off any excess water. Pat them very dry with paper towels. This is an important step because wet shrimp tend to steam in the pan rather than develop a delicious golden exterior.

Place the shrimp in a bowl and season them with salt, black pepper, paprika, and Italian seasoning. Toss gently until every shrimp is evenly coated.

Heat a large skillet over medium-high heat. Add the olive oil and butter. Once the butter has melted and the pan is hot, carefully add the shrimp in a single layer.

Cook the shrimp for approximately 1–2 minutes on the first side. Turn them over and cook for another 1–2 minutes. The shrimp should become pink and opaque and should curl slightly.

Be careful not to overcook them. Shrimp cook very quickly, and overcooked shrimp can become rubbery and tough.

Once cooked, transfer the shrimp to a clean plate and set them aside.

Making the Tuscan Sauce

Reduce the heat to medium. Using the same skillet, add the minced garlic. You can add a small amount of butter or olive oil if the pan looks dry.

Cook the garlic for about 30–45 seconds, stirring constantly. It should become fragrant without turning dark brown. Burnt garlic can make the entire sauce taste bitter.

Add the sliced sun-dried tomatoes and red pepper flakes if you are using them. Cook for approximately 1 minute. The sun-dried tomatoes will release some of their flavor into the oil and butter left in the pan.

Next, pour in the chicken or vegetable broth. Stir well, scraping the bottom of the skillet with a wooden spoon or spatula. This helps loosen the flavorful browned bits left behind by the shrimp.

Allow the broth to simmer for about 1–2 minutes.

Adding the Cream

Lower the heat to medium-low and slowly pour in the heavy cream. Stir continuously as you add it so that everything combines smoothly.

Add the dried oregano and a little black pepper. Bring the sauce to a gentle simmer.

Do not boil the cream aggressively. A gentle simmer is enough to thicken the sauce while keeping it smooth and creamy.

Let the sauce cook for approximately 2–3 minutes.

Now add the freshly grated Parmesan cheese. Stir continuously until the cheese melts completely into the sauce.

The Parmesan will help thicken the sauce and give it a rich, salty, savory flavor.

If the sauce becomes too thick, add a few tablespoons of broth or cream. If it is too thin, allow it to simmer for another minute or two.

Adding the Spinach

Once the sauce has reached a creamy consistency, add the fresh spinach.

It may look like a lot at first, but spinach wilts quickly. Stir it gently into the sauce and cook for approximately 1–2 minutes until the leaves are soft and wilted.

Taste the sauce at this point.

Add additional salt and black pepper if necessary. Remember that Parmesan and sun-dried tomatoes are naturally salty, so taste before adding a lot of salt.

For a brighter flavor, add approximately 1 teaspoon of fresh lemon juice. The lemon does not make the dish taste strongly of lemon; instead, it helps balance the richness of the cream.

Returning the Shrimp to the Pan

Return the cooked shrimp to the skillet.

Gently stir and coat the shrimp with the creamy Tuscan sauce. Let everything cook together for approximately 1–2 minutes over low heat.

The goal is simply to warm the shrimp through and allow them to absorb some of the sauce. Avoid cooking them for too long.

Turn off the heat and sprinkle the dish with freshly chopped parsley. You can also add fresh basil for an extra Tuscan-style flavor.

Your creamy Tuscan shrimp is now ready to serve.

Serving Suggestions

Creamy Tuscan shrimp is extremely versatile.

For a classic meal, serve it over freshly cooked fettuccine, linguine, spaghetti, or penne. Toss the pasta directly into the skillet with the sauce so that every piece becomes coated.

You can also serve the shrimp with steamed white rice or fragrant basmati rice. The rice absorbs the creamy sauce beautifully.

Mashed potatoes are another excellent option, especially if you enjoy rich and comforting meals.

For a lower-carbohydrate option, serve the shrimp with roasted vegetables, zucchini noodles, cauliflower rice, or a simple green salad.

And don’t forget crusty bread. Garlic bread or toasted bread is perfect for dipping into the leftover Parmesan cream sauce.

Tips for the Best Creamy Tuscan Shrimp

Use large shrimp. Larger shrimp are easier to cook without drying out and have a satisfying texture.

Dry the shrimp before seasoning. Removing excess moisture helps them brown properly.

Don’t overcook the shrimp. Shrimp only need a few minutes. Once they are pink, opaque, and slightly curled, they are generally ready.

Use freshly grated Parmesan. Fresh Parmesan melts more smoothly and creates a better sauce than many pre-shredded varieties.

Keep the sauce at a gentle simmer. High heat can cause a cream sauce to separate or become greasy.

Adjust the thickness. If your sauce is too thick, add broth or cream a little at a time. If it is too thin, simmer it gently for another minute or two.

Taste before adding salt. Parmesan and sun-dried tomatoes can already provide considerable saltiness.

Easy Variations

For extra heat, increase the red pepper flakes or add a small amount of cayenne pepper.

For a cheesy version, add a little extra Parmesan or stir in a small amount of mozzarella at the end.

You can also add sliced mushrooms, cherry tomatoes, roasted red peppers, or artichoke hearts.

If you don’t eat shrimp, the same sauce works well with chicken. Simply cook sliced chicken thoroughly before preparing the sauce.

For a lighter version, use half-and-half instead of heavy cream. The resulting sauce will be less rich but still delicious.

Storage and Reheating

Store leftover creamy Tuscan shrimp in an airtight container in the refrigerator for up to 3 days.

When reheating, use low to medium heat and add a splash of milk, cream, or broth to loosen the sauce. Stir gently until heated through.

Avoid boiling the leftovers because high heat can cause the cream sauce to separate and can make the shrimp rubbery.

Final Result

The finished dish should have tender, juicy shrimp covered in a silky garlic Parmesan sauce. The sun-dried tomatoes add sweetness and acidity, while spinach provides freshness and color. Garlic, oregano, Italian seasoning, and Parmesan bring everything together.

For the best experience, serve the creamy Tuscan shrimp immediately while the sauce is hot and silky. Pair it with pasta and garlic bread for a complete restaurant-style dinner that can be prepared in roughly 30 minutes.
