Lemon-Raspberry Protein Muffins

Ingredients

For the muffins

  • 1 cup (120 g) oat flour
  • ½ cup (50–60 g) vanilla protein powder
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large eggs
  • ½ cup (120 g) plain Greek yogurt
  • ¼ cup (60 ml) milk
  • ¼ cup (60 ml) honey or maple syrup
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • 1 teaspoon vanilla extract
  • ¾ cup (90–100 g) fresh or frozen raspberries
  • 1 tablespoon oat flour, for coating the raspberries

Optional lemon glaze

  • ½ cup (60 g) powdered sugar
  • 1–2 tablespoons fresh lemon juice

Equipment

You’ll need a 12-cup muffin tin, paper muffin liners, two mixing bowls, a whisk, a rubber spatula, measuring cups and spoons, and a cooling rack.

Step 1: Prepare the Oven and Muffin Tin

Start by preheating your oven to 350°F (175°C). Allow the oven to fully preheat before putting the muffins inside, because the initial burst of heat helps them rise properly.

Line a standard 12-cup muffin tin with paper liners. You can also lightly grease the tin if you prefer not to use liners.

If your muffin tin has particularly deep cups, you may end up with slightly fewer than 12 muffins. That’s perfectly fine—just fill the cups evenly rather than making some muffins significantly larger than others.

Step 2: Prepare the Dry Ingredients

Add the oat flour, vanilla protein powder, baking powder, baking soda, and salt to a medium-sized bowl.

Whisk everything together thoroughly. This step is important because protein powder can sometimes form small clumps. Evenly distributing the baking powder and baking soda also helps the muffins rise consistently.

If your protein powder is very dense or tends to clump, you can sift it together with the oat flour before adding the remaining dry ingredients.

Step 3: Prepare the Wet Ingredients

In a separate large bowl, crack in the two eggs and add the Greek yogurt, milk, honey or maple syrup, lemon juice, lemon zest, and vanilla extract.

Whisk until the mixture is smooth and well combined.

For the best lemon flavor, use freshly grated lemon zest rather than bottled lemon flavoring. The yellow outer portion of the lemon peel contains aromatic oils that provide a much stronger and fresher lemon flavor.

Be careful not to grate too deeply into the white part of the peel, known as the pith. It can taste quite bitter.

Step 4: Combine the Batter

Slowly add the dry ingredients to the wet ingredients.

Using a rubber spatula or wooden spoon, gently stir until everything is just combined. Avoid overmixing the batter. A few tiny streaks of flour are preferable to mixing the batter excessively.

The finished batter should be thick but scoopable. Protein powder absorbs liquid as it sits, so if the batter seems unusually thick, let it rest for a minute and then add another tablespoon of milk if necessary.

The exact consistency can vary depending on the protein powder and oat flour you use.

Step 5: Prepare the Raspberries

Place the raspberries in a small bowl and gently toss them with one tablespoon of oat flour.

Coating the berries lightly helps reduce the amount of juice they release directly into the batter and can help prevent them from sinking completely to the bottom of the muffins.

If you’re using frozen raspberries, there’s no need to thaw them. In fact, using them frozen can make them easier to fold into the batter without breaking apart.

Fresh raspberries can also be used. If they’re particularly large, you can gently cut them in half.

Step 6: Fold in the Raspberries

Add the coated raspberries to the muffin batter.

Using a spatula, gently fold them in with just a few strokes. Try not to crush the berries too much. Some berries may break apart slightly, which is completely fine and will create beautiful raspberry-colored streaks throughout the muffins.

Avoid aggressive stirring because too much mixing can make the muffins dense and cause the raspberries to completely disappear into the batter.

Step 7: Fill the Muffin Tin

Divide the batter evenly between the prepared muffin cups.

A cookie scoop works particularly well for this because it helps distribute the batter evenly. Aim to fill each cup approximately ¾ full.

If you have leftover batter after filling the 12 cups, don’t overload the muffins. Instead, distribute the extra batter as evenly as possible.

For slightly taller muffins, you can fill the cups a little higher, but keep in mind that the batter will rise during baking.

Step 8: Bake

Place the muffin tin in the center of the preheated oven.

Bake for approximately 18–22 minutes.

The exact baking time will depend on your oven, the size of your muffins, and the type of protein powder you use.

The muffins are ready when the tops look lightly golden and spring back gently when touched. Insert a toothpick into the center of one muffin. It should come out clean or with a few moist crumbs attached.

Try not to overbake them. Protein-rich baked goods can become dry if they remain in the oven too long.

Step 9: Cool the Muffins

Once baked, remove the muffin tin from the oven and let the muffins cool in the pan for approximately 5 minutes.

Then carefully transfer them to a wire cooling rack.

Allow them to cool for at least another 10–15 minutes before eating. The texture continues to set as they cool, and the raspberry filling can be extremely hot immediately after baking.

Optional Step 10: Add Lemon Glaze

For a sweeter finish, prepare a simple lemon glaze.

Add the powdered sugar to a small bowl. Gradually add fresh lemon juice, starting with one tablespoon. Stir until smooth.

If the glaze is too thick, add a few drops of lemon juice. If it becomes too thin, add a little more powdered sugar.

Once the muffins have cooled, drizzle the glaze over the tops.

The glaze adds extra sweetness and an intense lemon flavor, making these muffins feel more like a bakery-style treat.

Storage

Store completely cooled muffins in an airtight container in the refrigerator for approximately 4–5 days.

Because they contain Greek yogurt and fresh fruit, refrigeration is preferable for longer storage.

You can also freeze the muffins. Place them in a freezer-safe container or bag and freeze for up to 2–3 months.

To serve, allow a muffin to thaw at room temperature or microwave it for approximately 20–30 seconds. For a slightly crispier exterior, you can warm thawed muffins in a toaster oven.

Recipe Tips

For the strongest lemon flavor, use plenty of fresh zest. The zest contributes more concentrated lemon aroma than lemon juice alone.

For sweeter muffins, increase the honey or maple syrup slightly, or use the optional glaze.

For a less sweet, more breakfast-style muffin, leave off the glaze.

If you prefer a richer texture, replace some or all of the milk with additional Greek yogurt. Keep an eye on the batter consistency and add a small amount of milk if it becomes too thick.

Different protein powders behave differently. Whey-based powders can produce a softer texture, while some plant-based protein powders absorb considerably more liquid. If your batter looks extremely dry, add milk one tablespoon at a time until it reaches a thick but scoopable consistency.

Nutrition

The exact nutrition will depend on the protein powder, Greek yogurt, milk, and sweetener you choose. As a general estimate, each muffin may provide approximately 9–12 grams of protein when the recipe makes 12 muffins.

These muffins combine protein, carbohydrates, fruit, and dairy, making them a convenient option for breakfast or a snack. They’re particularly useful when you want something sweet and satisfying without relying entirely on a traditional bakery muffin.

Final Result

The finished Lemon-Raspberry Protein Muffins should have lightly golden tops, a soft and tender center, bursts of juicy raspberry throughout, and a fresh lemon aroma. The Greek yogurt helps keep the crumb moist, while the protein powder increases the protein content.

Serve them warm for a soft, comforting breakfast, or chill them and enjoy them as an easy grab-and-go snack. Add the lemon glaze when you want something sweeter and more indulgent.

With their bright citrus flavor and sweet-tart raspberries, these muffins are an easy way to turn a protein-rich snack into something that genuinely feels like a treat.
